As conquilhas são bivalves de concha triangular muito abundantes sobretudo nos meses de verão. Deve o seu nome ao conde de Lippe, general alemão que residiu em Portugal durante o século XVIII. Pobres em gordura, mas com uma abundante quantidade de ferro, são um ótimo ingrediente. No entanto há alguns cuidados a ter. Devem ser sempre colocadas de molho em água salgada e passadas por várias águas antes de serem cozinhadas. Todas aquelas que, depois de cozinhadas, não se apresentem abertas não devem ser aproveitadas.
A caldeirada é uma especialidade com origem nas refeições que os pescadores preparavam a bordo das embarcações para recuperarem do esforço da faina, utilizando para a confeção os peixes com menos valor comercial. Diz-se que onde há pescadores há caldeira, mas também se verifica que este prato varia consoante a zona do país. Esta receita é à moda de Setúbal.
