Roots Restaurant & Bar
Como o nome implica, o Roots foi buscar às raízes a base para depois apresentar pratos reconstruídos e agradáveis não só à vista como ao palato. Sob a tutela do chefe Anderson Miotto surgem iguarias como as vieiras, o cabrito, sempre com a preocupação de dar primazia aos produtores locais. A carta de vinhos acompanha a aposta na região, dando destaque à região do Dão, com especial enfoque para os pequenos produtores. O espaço é complementado pelo bar que apresenta uma carta de cocktails de autor e pela coqueluche, o expresso Roots, servido com alguns miminhos. Com o objetivo de ser ele próprio um chamariz (para o hotel) o restaurante tem na “calha” a realização de diversos jantares vínicos assim como eventos com chefs conceituados convidados.
