"Zé do Pipo", que batizou este prato típico de bacalhau, era a alcunha do autor e proprietário de um restaurante tradicional da cidade do Porto. Após ter vencido um concurso gastronómico com esta receita nos anos 60, o prato passou a ser adotado como especialidade por muitos restaurantes. Há inclusive algumas adaptações, nomeadamente o "Bacalhau à Zé do Pipo com Queijo". No entanto, ficam as dicas para a confeção do prato tradicional.
